Slightly Sour Quiche Recipe

Cali Lewis' Sausage & Feta QuicheWhen Neal and I got married, our first apartment was tiny. About 400 square feet tiny. It was a luxury apartment, though, so it was nice, but about a fourth of the space was the “living room” where we had a bed and TV and no couch. Half of the apartment was the kitchen…gormet appliances and comparitavely, a lot of space. We cooked a lot in that apartment. Just down the street there was a Mediterranean grocer and it’s from that small store that we got the inspiration for this quiche recipe:

Slightly Sour Quiche

4 Eggs
4 oz Plain Yogurt
1/4 teaspoon Salt
1/8 teaspoon Pepper
1 tablespoon Flour
8 oz Tomato Basil Feta
5 inches Sausage

1) Whip together eggs, yogurt, salt and pepper.

2) Separately, mix sausage, feta and flour. Then combine the two mixtures.

3) Pour into hot pastry shell.

4) Bake at 325 for 35-40 minutes. When you can slide a knife in and it comes out clean, it’s done.

I like to make my own pie crust, and it’s super simple!

Homemade Pie Crust

2 cups All-purpose Flour
1 teaspoon Salt
1 1/2 sticks Butter
1/2 cup Water (cold)

1) Pour the flour into a mixing bowl and add salt. Cut the butter into 1/2″ pieces and toss in with the flour and mix so that the butter starts to cling to the flour.

TIP: Doing this with your hands is soooo much easier! I used to do it with a fork and it didn’t work as well. I strongly suggest going for the mess and digging in!

2) Add about half the water while scraping the mixture into a dough. Add more water as necessary. You don’t want it to be too dry or it’ll crack, but you don’t want it to be too wet where you feel the water oozing out. Get it to the point where it’s moldable and moist.

3) Form into a ball, sprinkle with a bit of flour, wrap in parchment paper and let it sit in the freezer for about an hour. *If you’re in a time crunch, this step isn’t necessary.

4) Take the dough out of the freezer and remove the parchment paper. If the dough is hard, hit it with the roller until it softens. Lightly flour your surface and roll out the dough.

5) Place in your baking dishes. Bake at 400 degress about 10 minutes until it just starts to get some color. Poking some holes in the bottom helps the dough not to bubble. You want it partially cooked because it’ll continue cooking in Step 6.

6) Pour the quiche mixture in the bowl and cook at 325 degrees for 35-40 minutes.
